Sinanglay   (Others, Masbate, Luzon)


INGREDIENTS:

      • 1/2 cup Tomatoes,sliced
      • 1 tsp. Garlic,minced
      • 2 tbsp. Onion,sliced
      • 1/2 cup,Coconut milk,pure
      • 1-1/2 cup,Coconut milk,2nd extraction
      • 3 tsp. Salt
      • 12 pcs. Fish,fillet
      • 12 pcs. Petchay leaves,big
      • 12 pcs. Petchay stalk
      • 2 pcs. Siling labuyo


    Mix tomatoes,garlic,onion and ginger with pure coconut milk.  Add second extraction of coconut milk and season with salt.  Lay fish fillet on top of 2 petchay leaves,season with coconut mixture and fold over.  Repeat the process with the remaining fish fillet and petchay leaves.  Add the remaining coconut mixture and siling labuyo.  Cook over medium heat for 10 minutes.  Serve hot.
