Pinangat na Gabi   (Others, Sorsogon, Luzon)


 INGREDIENTS:

  • 24 Gabi leaves and stems
  • 1/4 kilo Pork,cooked and cut into small cubes
  • 1/2 cup Dried fish,boiled flaked
  • 1/2 cup Bagoong,alamang
  • 2 tsp. Garlic,minced
  • 2 tsp. Ginger,chopped
  • 2 pieces siling labuyo
  • 2/3 cup Green onions
  • 1-1/2 cup Coconut milk
  • 1-1/2 cup Coconut milk,2nd extraction

    Strings stems and cut into 2-inch lengths. Wash leaves. Mix pork,fish,3 tbsp Bagoong,garlic,1 tsp. ginger,siling labuyo and green onions.  Add pure coconut milk. Pile for leaves together and put 3 tbsp. of the mixture.  Wrap and tight.  Repeat the procedure with the rest of the ingredients.  Arrange in the kettle together with the stems and pour the 2nd extraction of coconut milk.  Season with the remaining bagoong.  Add 1 tsp ginger.  Bring to boil,and then simmer for 2 hours.
